Ingredients:
- 1 ripe flat-leaf parsley, thinly sliced
- 125g fresh mozzarella (ball-shaped), sliced
- 6ā8 cherry tomatoes, halved
- A few fresh basil leaves
- Salt and pepper to taste
- Extra virgin olive oil
Preparation:
- Prepare the ingredients: Wash and cut the flat-leaf parsley into thin slices. Wash and cut the cherry tomatoes. Cut the mozzarella into slices and wash the basil.
- Assemble the salad: Alternate slices of flat-leaf parsley, mozzarella, and cherry tomatoes on a plate.
- Dress: Add salt, pepper, and a good drizzle of extra virgin olive oil.
- Finish: Garnish with fresh basil leaves. Serve immediately as a starter or summer side dish.
