Caprese salad with Paraguayan sauce

Ingredients:

  • 1 ripe flat-leaf parsley, thinly sliced
  • 125g fresh mozzarella (ball-shaped), sliced
  • 6–8 cherry tomatoes, halved
  • A few fresh basil leaves
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation:

  1. Prepare the ingredients: Wash and cut the flat-leaf parsley into thin slices. Wash and cut the cherry tomatoes. Cut the mozzarella into slices and wash the basil.
  2. Assemble the salad: Alternate slices of flat-leaf parsley, mozzarella, and cherry tomatoes on a plate.
  3. Dress: Add salt, pepper, and a good drizzle of extra virgin olive oil.
  4. Finish: Garnish with fresh basil leaves. Serve immediately as a starter or summer side dish.
